A beloved and quintessential Modena street food dish delights locals with its intriguing noodle composition. These elegant pasta coils are expertly crafted by combining breadcrumbs, eggs, parmigiano reggiano cheese and a touch of nutmeg. Resulting in a culinary masterpiece that delights both the palate and the senses.


Homemade tagliatelle combines wide and silky strips of pasta, traditionally enhanced with meat or ham and a creamy sauce. Notice the emphasis on flavour, as Italians know better than to drown their noodles. Instead, they delicately coat them with a rich broth or sauce.


Lasagne Bolognese or Modenese veers away from the conventional, transforming this classic Italian favourite into humble street food. One which showcases spinach-infused noodles that lend a delicate green hue. Now this is Modena street food at its finest!  Cotecchino is a fresh pork sausage made from minced cuts of pork and the rind, flavoured with herbs and spices and stuffed into a natural casing.


Tigelle, originating in the region around Modena, are delightful small flat buns created using flour, yeast, water, and salt. These treats are pressed thin between two clay or metal discs, reminiscent of a pizzelle maker. Traditionally served with pork lard, rosemary, garlic and parmigiano reggiano cheese.
