What makes San Sebastián cheesecake so special?

Even before The New York Times elevated it to gastronomic excellence, this dessert had already gained popularity among renowned chefs. In fact, it has become one of the most replicated cheesecakes in the restaurant industry since its creation back in 1990.

The cheesecake is lovingly baked in a scorching hot oven, yielding a delectably caramelized top and a luxuriously velvety interior. The sugar is meticulously balanced, giving way for the delicate essence of the cheese to take center stage. And yet, there exists an enchanting quality that transcends ordinary realms!

This recipe boasts a lusciously creamy texture, thanks to the generous use of cheese. By omitting the biscuit base, we further enhance its smoothness. Similarly, removing the raspberry or blackberry jam allows the natural fruit flavors to beautifully complement the exquisite taste of the cheesecake.

What is it about this culinary delight that has conquered the world?

The fame of La Viña cheesecake spread when renowned chefs, both national and international, started creating their own interpretations of this iconic recipe, often referred to as "La Viña-style" cheesecake.
