8:30 AM - Introduction

Meet your guide and private minivan and go to a Parmigiano Reggiano cheese farm in the country side. Follow the making process and see the storeroom where more then 5,000 wheels are aging from 12 up to 48 months. In the little bottega next to the storage room you can taste the cheese and buy some to take home.

After this, board your car and proceed for the visit to a Balsamic Vinegar Traditional Acetaia: this is a traditional Acetaia/vinegar maker and a museum where you can see the largest collection of “tragni and zuccotti” - the ancient way we use to age traditional balsamic vinegar in Modena. I will explain how we have made Traditional Balsamic Vinegar in Modena for centuries and the difference between the product you find in supermarkets. You’ll be fascinated by those old barrels where the product is aged for over 30 years. Taste omit the product and shop.

Board your car and drive through the countryside and reach a Lambrusco wine cellar where we’ll be tasting a selection of local sparkling wines. Lambrusco sparkling red wine is really unique. Research efforts and studies have been necessary to restore the name of this wine which is nowadays one of the most exported varietals in the world.

Lambrusco wine matches our Emiliana cuisine and food. You have to try it with the tagliatella and ragù!
