In Tuscany throughout the year we can taste different types of truffle. This is thanks to the climate and terrain which typify the area. The truffle, which has been recognised since Ancient Greek and Roman times, is one of the best products the earth can give us. Tuber Magnatum Pico Renowned for its distinction and commanding price, this truffle claims the title of the most coveted in the market. Its shape, predominantly spherical, boasts an elegant uniformity with occasional nuances of crevices and protrusions. The smooth exterior assumes a delicate hue, tinged with shades of whitish-yellow. Internally, its color metamorphoses, influenced by its symbiotic relationship with the hosting tree and the maturity it has achieved. One may encounter variations that span from pristine white to rich brown or even a delicate rose-colored hue. Its majestic aroma envelopes the senses, and it is notably gentle on the digestive system. Often savored in its raw form, this truffle lends itself gracefully to being thinly sliced and lavishly adorned upon various delicacies. However, its ephemeral conservation demands utmost vigilance, as the fleeting period between maturity and decay is but a breath. Tuber Borchii Vitt o Tuber Albidum Pico Tuber Borchii vitt or Tuber albidum pico, scientifically known as "Marzuolo," is a delicate delicacy. Its rounded and symmetrical shape belies its modest size. The peel, light in color and velvety smooth to the touch, reveal a flesh that transitions from a pale hue in its unripe state to a captivating reddish-brown as it matures. While its scent is more subtle compared to the Fine White Truffle, it is often found in the same habitats. Harvested between February and March, this esteemed truffle occasionally graces us in April and even the autumn months. Although it possesses a certain edibility, it lacks the grandeur and ease of digestion of its esteemed counterparts. The transformative power of cooking strips away its scent, flavour, and renders it almost spongy, humbling its presence. Tuber Aestivum Vitt The esteemed Tuber aestivum vitt boasts a size spanning from 3 to 10 centimetres. Its elegant presence is adorned with a dark, pyramidal skin, reminiscent of rough bark, earning it the moniker Scorzone. Within its hazel-colored flesh lies a tapestry of whitish veins that deepen in shade with the passage of time. Emitting a gentle, earthy fragrance, this truffle is not only palatable but also encapsulates a unique gastronomic experience, though it may be considered of lesser value than the esteemed Fine Black Truffle. Its ripening period commences in May and extends through the autumn season.
