This is a Provencal classic dish, which hails from Marseille where you can enjoy the very best. Some chefs believe you cannot make it without using scorpionfish, as it gives the stew its reddish appearance. However, it is just as delicious with any sort of small fish, along with potatoes, onions, fennel, saffron and pastis.


This dish is very popular as comfort food, especially in the winter months. Daubes are slow-cooked stews made of beef or lamb braised in wine and vegetables. The tenderised dishes are cooked for most of the day. Polenta or gnocchi will usually accompany this dish.


Another fabulous dish to eat in Provence - this delicious vegetable stew contains the very best of fresh Provençal vegetables. Aubergines, courgettes, onions, peppers and tomatoes are cooked slowly with garlic and herbs. It is even more delightful with a hunk of "fougasse" (flatbread).

Brouillade de Truffes

This dish is a French speciality and is basically - scrambled eggs with truffles. However, the process of scrambling the eggs takes much longer than the classic scrambled eggs. The eggs need to be cooked very slowly, then the truffles added to give a unique flavour. Lastly, a dash of summer truffle olive oil is sprinkled lightly over the dish.

Soupe au Pistou

This gorgeous soup is similar to the Italian minestrone and designed to highlight the seasonal vegetables. It consists of white beans, tomatoes, onions, green beans, squash, and pasta. After the slow-cooking process, a spoonful of pistou is added for you to stir in.


This simple but delicious dish is made from finely chopped or pureed olives, capers, and olive oil. The name derives from the Provençal word for capers – tapenas. It is often served with fresh crusty bread for a starter or used in fish dishes.

Salade Niçoise

As the name suggests - this salad comes from the fabulous town of Nice. It basically includes hard-boiled eggs, anchovies, tomatoes, canned tuna, and lettuce. The dish was once known as a ‘poor man’s’ type of food, made with anchovies and any seasonal vegetables available at the time.

Tarte Tropézienne

This classic dessert came from St. Tropez off the Côte d’Azu. It became popular as a firm favourite with the actress Brigitte Bardot. The original recipe has apparently not changed since the 1950’s. It is more of a cake with a huge quantity of filling and is very light and refreshing.
