After you're picked up from your hotel, tie on your apron and head into the kitchen. Meet your cooking instructor and begin your introduction to Lao cuisine—this country's culinary heritage is distinct from other Southeast Asian nations, and is so tied to the identity of the people that Laotians refer to themselves as "children of sticky rice."

Learn to prepare the national dish of laab, a fresh minced salad of meat, lime, fresh herbs, and crispy, roasted rice. Your instructor guides you as you work together to prepare the next dish, orh, with spicy stewed meat and vegetables. Wrap delicate fish or seasoned chicken in banana leaves to make mok pa or mok gai, and chop ingredients for a fresh side of tam mak houng papaya salad and a green salad tossed with a flavorful Lao dressing.
