- 5First stop: Parmigiano Reggiano Factory
- 6At this caseificio (cheese factory) you will be introduced to the universe of parmesan cheese and get to know its secrets. Behind every roll of Parmigiano Reggiano is more than meets the eye, due to the intricate traditional recipe behind it and the controlled conditions of the entire process
- 7You will watch cheese makers at work and witness the entire process. The tour of the factory will eventually lead to the ageing room (‘stagionatura’ in Italian), where you will admire rows and columns of cheese wheels perfuming the air. The factory produces more types of cheese, all organic
- 8The caseificio tour will end with a tasting of different types of Parmesan Cheese and ricotta accompanied by local products
- 9Second Stop: Balsamic Vinegar Factory:
- 10Acetaia Sereni is a leader in the production of traditional balsamic vinegar of Modena and a vast range of sweet and sour condiments
- 11Here you will have a traditional lunch at the property's restaurant that is overlooking breathtaking scenery. Lunch is centred around dishes typical of the Emilia-Romagna region that are best paired with different types of balsamic vinegar
- 12Followed by a private tour of the cellars, receiving a full explanation of the balsamic vinegar’s manufacturing process: from the pressing of the grapes and the wort boiling to the filtration and mixing steps. The visit will end with a balsamic vinegar-tasting
- 13Third Stop: Prosciutto Factory:
- 14Prosciuttificio Leonardi was established in 1988, building upon extensive expertise in the pork slaughtering and processing industry. That same year, the company became a member of Modena's "D.O.P." Prosciutto Consortium, ensuring that all their products adhere to the PDO (Protected Designation of Origin) EU quality standards
- 15This esteemed factory maintains rigorous production standards, resulting in the creation of exceptional dry-cured hams. They have earned a reputation as a trusted supplier for renowned establishments such as the Gucci restaurant in Florence and Massimo Bottura's prestigious restaurants
- 16Tour the factory and explore production rooms to learn about ham processing, from receiving the meat to the final product
- 17End your visit with a tasting experience, trying a variety of their products, including raw and cooked hams like Culatta, Lardo, Salami, Prosciutto Cotto, and Prosciutto al Tartufo
- 18Enjoy the cold cuts accompanied by Crescentine (also known as Tigelle), a typical bread from the region
